Ingredients
½ lb butter (2 sticks)
1 ¼ cups dark brown sugar
5 large eggs
1 cup all-purpose flour
1 cup plain breadcrumbs
1 tbsp baking powder
¼ tsp salt 4 tsp Real Jamaican Mixed Spice
3 cup(s) Real Jamaican Soaked Fruits
Directions: Preheat the oven to 250 degrees Fahrenheit and prepare a 10-inch baking pan by using a pan liner and greasing the sides. Cream butter and sugar until light and fluffy. Gradually beat in eggs one at a time. Combine flour, baking powder, breadcrumbs, Real Jamaican Mixed Spice, salt and mix well.
Fold the flour mixture into the creamed mixture alternately with Real Jamaican Soaked Fruits. Scrape batter into a greased and lined 325 cm (10 inch) baking tin. Bake in the preheated oven for about 2 hours, until a toothpick in the middle comes out clean. Cool cake(s) in pan for 15 minutes.
Tips For Baking
*For darker cake add more browning. *Cover cake tin with foil and place a pan with boiling water at the bottom of the oven to steam cake. * For the best tasting cake, brush cake with rum, brandy or sweet wine. Cover with plastic to seal in moisture for a few days. This will allow cake to age. *Serve with Butter Rum Sauce , vanilla, rum and raisin ice cream or frost with royal icing.
